So Sallie Mae loans as well as Direct loans, we wish to consolidate, reduce my payment, etc. Once we do that, do they still have options for deferrment, such as miss of income, starting behind to school, whatever?

Most likely that depends on who you consolidate with. Read the rules before you do it.
No matter who you consolidate with you keep all your benefits. Deferment, In School Deferment, tax deductions, etc.
As of July 1, 2006 you can not consolidate if you are currently in school more than 1/2 time so you may want to get this done quickly.
